Double Fried Orange Chicken

I have spent so many years trying to perfect this orange chicken recipe and I finally did it! It's the perfect median between sweet and savory, this is definitely worth trying!

Ingredients

  • For the chicken
  • 4 large chicken breasts, boneless, cleaned, and cut into bite size pieces

  • 3 eggs, whisked

  • 1/2 cup corn starch

  • 1/2 cup flour

  • Salt

  • Oil, for frying

  • For the orange chicken sauce
  • 1/2 cup of orange juice

  • 2 tbs of fresh orange zest

  • 1/2 cup granulated sugar

  • 3 tbs rice vinegar

  • 2 tbs soy sauce

  • 1/2 tsp ginger (fresh or ground)

  • 1/2 tsp minced garlic

  • 1 tsp red chili flakes

  • 1 tsp corn starch

  • 1 cup water

  • For the garnish (optional)
  • Chopped green onion

  • Orange zest

  • Sesame seeds

Directions

  • To Make The Orange Sauce
  • In a medium sized pot, add water, orange juice, sugar, vinegar, soy sauce, ginger, garlic, and chili flakes and heat on medium high for 5 minutes.
  • Sprinkle in corn starch and bring to a boil for 2 minutes and reduce to a simmer for 3 minutes, or until mixture begins to thicken, and remove from heat and sprinkle orange zest in and set aside.
  • To Make The Chicken
  • Combine corn starch and flour in a shallow dish with a heaping pinch of salt.
  • In another shallow dish, whisk eggs together and set next the the other dish.
  • Dip the chicken in the egg mixture and then the flour mixture and set them aside on a plate.
  • Heat 3-4 inches of oil in a pot over medium high heat until the oil temperature is at 350 F
  • Cook multiple pieces of chicken in groups, not at once. Cook for 2-3 minutes or until light brown and remove from oil onto a paper towel lined plate. Finish the process for all the chicken.
  • After the first round, turn up the heat to 400 F and flash fry in groups for about 2 minutes or until golden brown, not too dark.
  • Toss chicken with the orange sauce, any left over sauce can be used with the garnish, or on rice or lo mein.
  • Serve it with green onions, zest or seeds if desired.
